This Salmon Cake recipe is well-loved by the kids and grown ups in our family.

We love the crisp on the outside with tasty bites of salmon on the inside. This can be made as a healthy snack or appetizer and pairs well with my homemade, dairy-free tartar sauce. It’s so easy to make and is truly delicious!

Salmon Cakes w/ Dairy Free Tartar Sauce

Ingredients
  

  • 1 lb fresh salmon
  • 1/3 cup olive oil
  • 1 med onion, finely diced
  • 1 red bell pepper, finely diced
  • 1-2 garlic cloves, minced
  • 6 capers, minced
  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 2 tbsp vegan mayonnaise
  • 1 tbsp dijon mustard
  • 1/3 cup fresh parsley, finely chopped
  • 2 tbsp fresh dill, finely chopped
  • salt and pepper, to taste

Dairy Free Tartar Sauce

  • 1 cup vegan mayonnaise
  • 4 capers, minced
  • 1 mini dill pickle, minced
  • 1 tbsp pickle juice
  • juice of 1/4 lemon
  • 1/2 teaspoon garlic powder
  • salt and pepper, to taste

Instructions
 

  • Start by cooking the salmon so that it is cooled and tender for when you need to flake it. Preheat the oven to 425 and place the salmon on a baking sheet. Drizzle with 2 tablespoons of the olive oil and season with salt and pepper.
  • Bake for 12-15 minutes until the salmon is cooked through. Transfer to a plate and allow to cool in the fridge.
  • Meanwhile, saute your onion, bell pepper, and garlic in 1 tbsp of the oil over low heat until translucent, about 5 minutes. Remove from the heat.
  • Once the salmon is cool, flake it into large chunks and add to a medium-sized bowl. Add cooked onions and peppers, capers, almond flour, eggs, mayo, Dijon, herbs, salt, and pepper. Stir until homogenous, being careful to not break up the fish too much.
  • Form into 16 equal-sized patties and heat the rest of the olive oil in a large skillet over medium heat. Add the patties and cook for 3-4 minutes per side, or until they are golden brown on both sides. Remove to a plate lined with paper towels to absorb some of the oil.

Tartar Sauce

  • Lastly, make the tartar sauce. Mix all ingredients in a bowl until homogenous. Serve two salmon cakes per person alongside a healthy spoonful of tartar sauce.
