This easy salmon recipe can be made in just under 20 minutes. The combination of flavors from the lemon, dill and smoked paprika are to die for.
The smell of the fresh dill fills my kitchen with memories of cooking with my father after a day of fishing. My dad would often wake up just before the break of dawn. I would listen from my bed as he quietly left our home, many times too tired to join him. I waited with anticipation, hoping he would come back with a cooler filled with that night’s dinner. There is nothing better than fresh fish. I loved watching as he skillfully skinned each fish with a filet knife. There wasn’t an ounce of meat that went to waste.
After washing up, he’d pull out fresh herbs and spices and get to work. He was an avid fisherman with a passion for cooking his catch and it was evident as he carefully prepared each meal. Every fish was cooked at just the right temperature for just the right time so that every bite was juicy and filled with flavor. The smoky herbs and meat of the fish would melt in our mouths. Every bite reminding us of the care and love put into preparing this meal.
The day my father prepared this salmon dish, I was struggling with debilitating symptoms due to Lyme disease. He was visiting me from Florida to help out with the kids…and to cook healthy dishes for me. I remember sitting on a stool in our kitchen and watched as he pulled things out of my cabinets, looking for the best spices to prepare the salmon we just purchased. Watching my father filled me with the joy I felt as a child. The weight of my illness slowly lifting as he explained the importance of using the right combination of flavors and keeping the skin on to retain its moisture.
That salmon dish will forever be etched in my memory as it provided the “medicine” I needed in that moment. I’m filled with feelings of nostalgia as I write this blog. Watching my father take such care into something that brought him so much joy, continues to fill me with an indescribable white light.

WHAT YOU’LL NEED:
2-Wild Caught Salmon Filets
Two Lemons to add flavor and moisture
Salt + Pepper
Easy Salmon Recipe
- 2 wild-caught salmon
- 1/4 cup fresh dill, chopped
- 1 tbsp smoked paprika
- 1-2 lemons, sliced
- salt and pepper, to taste
- Preheat oven to 350 degrees.
- Sprinkle a dash of salt and pepper, paprika and dill over both filets.
- Place lemons on top of each filet.
- Cover and place in oven for 15-20 minutes.
Salmon is an excellent source of protein, vitamins and minerals, (including potassium, selenium and vitamin B-12. The essential fatty omega-3s found in salmon have anti-inflammatory properties and are known as valuable “brain-food.”
We try to eat salmon in our family at least 1-2x per week.
